I have just picked and dried some Choco Habs, Bhuts Jolokia's, Fatalli's, Thai Dragon's, Bolivian Rainbow's, Pumpkin Habs, Tabasco's, and Cow Horns. Getting more ready for the train as well. Can't wait!!

You could also google each variety to find ripeness times as well.
