  I liked the Fire.  Honey is still my favorite.  But the Fire is a nice change of pace for me.

I definitely over-trimmed this guy.  Whatever, first run at a brisket in this rig and I am already drunk.  Gonna rub it at 11 pm or so and toss it in around midnight.  Gonna rub it with kosher salt, pepper, onion and garlic powder.  Using cherry wood for the smoke.      

Cooking a brisket and crushing beers tonight.  i'll check back in after a few beers.  :)

Just hooked up the Guru.  Literally plugged the bitch in and it stoked it to the target temp. Getting this piece dialed in so I can feel more confident about snoozing tonight while the brisket is one.  

GM - You know I have one locked and loaded.   JHP - Nothing yet.  Seems tighter than a dolphins butt hole.

  Peep the gold ball valve on the right side of the unit.  Air goes in, through the firebox and then up and out the stack.  I just unboxed the DigiQ and fan.  I am trying to get that sorted before the brisket goes on tonight.

  13 lb brisket in the fridge...  Gotta grab some more coal and might start it tonight around 10 or 11.

  Thank the lord I have a full suspension mountain bike.  :)     Look in the background.  Green and black.  That one has a scratch in the door.  They are sending me a shipping slip to have it repainted.  Will season that one up when the door is back.

Jack Daniels is expanding its line up again.  Tennessee Fire!  I grabbed a nip of it last night.  Pretty much Fireball but with better whiskey.  Still love my Honey on the rocks the best.  Smokers arrived today so I might stay up all night seasoning them.
