heat "approach" of a sauce's heat

So far I use carrots, onions and garlic as a base. Saute in olive oil until carrots are tender and onions translucent. Then that goes into the food processor along with what ever chilis, vinegar, lemon/lime juice, and fruit I'm using. Then once smooth (or at least as smooth as it will get)...

    Grilled Pineapple Hab sauce

After sitting in the fridge for a day the garlic flavor has moved up to the front a lot more, and the pineapple is just enough to add a fruity sweetness. It's still mighty tastey and plenty hot but I think next time I might cut back on the garlic a bit.

    Grilled Pineapple Hab sauce

Thanks guys. The pineapple flavor is immediate and the heat isn't far behind on this one. Going to have to try it tonight on some mac and cheese and see how the flavors have combined over night. Can't wait til I have some super hots to play around with. I'm also looking forward to getting...

    Grilled Pineapple Hab sauce

This is definitely my best sauce yet. Nice and sweet without being too sweet or tart, and some pretty decent heat. Not overwhelming but it lets you know when you've used too much. I'm really glad i decided to grill the pineapple as i think it really developed the pineapple flavor. I used 13...

    Homemade Hoop House Plans?

another option I've seen is buying one of those picnic canopy tent things. Like for booths at street fairs/farmers markets kinda of things http://www.kmart.com/shc/s/p_10151_10104_089W030085270001P?prdNo=13&blockNo=13&blockType=G13 And then just close it off on all sides with your shade...

    Homemade Hoop House Plans?

I've priced one out that should run set me back about $30 not including the plastic. My mom (thank god for Moms) was so excited about me getting into gardening she bought me the plastic cover material as a gift, but said it ran about $70, so in total it's about $100. It's going to be 10' wide...

    favorite Favorite Jalopeno

I was originally staying away from growing varieties that are available at local markets and save space to grow the stuff that would be hard to get my hands on, but have decided after buying a hab and anaheim plant from my nursery that I might as well grow a few other "staple" varieties as well...

Why Thai joints are for chiliheads...

I think Thai has got to be my favorite asian cuisine. The local restaurant here knows me by name (although always seems to forget my wife...) and comps me appetizers all the time. One time I asked where one can buy Thai Tea leaves to brew at home and my favorite waitress told me of a...

heat "approach" of a sauce's heat

I've made a couple of sauces now and I've really enjoyed the flavor of them a lot, I just can't seem to get my heat the way I want it. I made a chipotle and cascabel sauce, and a mango hab sauce. Both sauces have a decent amount of heat, but it really doesn't hit until after you've swalloed a...
