    Anything above 40F is fine.  It wont hurt your plants.  But it wont help them grow faster either.

      Do you have a hoop house setup on your raised beds?  I've found they REALLY help isolate the plants from the weather extremes we get in April.  On a 50F day, its 70F in the hoop house, and they help protect the plants from the wind and rain.  I expect I'll keep them on the beds until June.

    For me, it really depends on what flavors you want in your sauce.  Asking fresh vs dry peppers for a sauce, is like asking should I use grapes vs raisins, or fresh tomatoes vs sun dried tomatoes in a recipe.  Drying a fruit / veggie out will change its flavor profile.  So figure out what flavors...

    The Aji Lemon (or Lemon Drop) are good.  I found the Aji Pineapple last year and loved it.  Not as hot as the Aji Lemon, but it really does have a pineapple flavor to it.  Totally fun!
