Yes, I usually cook my sauce on a high setting for about an hour and then bottle during and after at least 10 minutes of boiling. This batch would very slowly drip out when using a dripper in the bottle so it was just the right consistency I like as I love to coat burgers or tacos or hell...

NEO, he's in the Matrix!! :rofl: Sorry I just had too. I used to live in NEO myself, Salem. I miss living out there, lots of good fishing, hunting, golfing, and the entire atmosphere around those parts just seemed more lax. good luck with your pepper prolonging and pod maturing!

This sauce sure is yummy! Thanks JustaGuy for bringing me some! I used it in a stromboli and it gave it a nice little kick! Not very hot if at all, at least compared to your Hell Sauce :mouthonfire:

btw, good luck with making a hot sauce actually hot. I've given up, even with 214 pods of the hottest of the hot peppers my latest sauce could be beer bonged by an infant with no troubles.. :(
