Harvested some peppers today

I wasn't sure how the 7 white hybrid should go from green to white, if it does so in stages or if it should go from green to white in 1 time. 2 of them are now almost completely pale yellow.

I have made a test run but without peppers. I have got the temp up to 120 degrees F. And would have gone higher I think. I was thinking about 122 degrees F. to dry the peppers. Can't use it for real yet because it still smell of fresh paint.
