Yes I'm in Texas and have always loved there food ! I got that gumo down ,make a shrimp head , shrimp peelings,fish bones ,crabs shells ,into a stock then make the roux and it's on ?

Without clicking, I know you are talking about Paul Prudhomme, and I learned from his nephew David Prudhomme, because he now lives and owns a restaurant here in PA. You got it bud , all Paul's books have taught me a lot . I have lived in New Orleans and always at Paul's rest !
