I have some in the freezer that have been there for 2 years in regular ziplock bags.
The they are still good although not as good as fresh. I'm sure if you put them in the foodsaver bags they will be fresh for years.
Not all flowers get pollinated or set fruit. Even the most productive plants have some blossom drop.
Too much nitrogen and too much heat will decrease pod set.

They have water. For some reason the Douglah's leaves seem more thin than the the Scorpions.
So they kinda wilt during the day but they are well hardened off :)
Well I'm back home and in two weeks my plants have really taken off.
Either the coffee of the pesticide has worked with whatever it was chewing the leaves.
Yellow Cardi Scorpions
Goat Peppers (looks like they may need a little calcium)
Douglahs...Some have started setting flowers
I've never used that stuff before so really can't say.
When things got bad I have used Malathion or Triazicide concentrate.
Never noticed any ill effects on the plants using them.

Yes you would not see any cross effects until u grow the seeds from the pod that cross pollinated.
The pods on the parent plant will not show cross pods.
Looks like some type of red 7 pot or maybe a cross.
The Douglah should have a smokey, nutty earthy taste. Thats what I got from the few i have tasted.
Where as the Yellow 7 tasted more fruity with a touch of citrus IMO.
That stuff looks awsome AJ. I have been looking for the best way to preserve my peppers maintaining there natural flavor.
I noticed on the first page you have a pic of a preasure cooker. Is that used in the process, maybe I missed something?
