Yes, much longer season than I have in Ohio anyhow! Still if you have the ability to overwinter and dont mind doing so the Amarillo is worth it.
I am basically a chinense guy so even though I enjoy some Aji I like Superhots and Habs the most.

Once I get my plants set I dont move them unless of emergency like you stated. By end of season nearly all my plants roots in 5 gallon buckets have reached bottom of bucket and grown into ground.

over-watering is the enemy of all chili growers, killing them with kindness one plant at a time. I always follow the rule dont water the plants until they start to droop, works for me.
Depends what the weather is like in your region.... if it is extremely hot you need to consider diffused shielding and also proper ventilation. On an 80F day my greenhouse easily reaches 100-105F

I use both and also wood, a majority of time its just propane as there is no time involved..... just flip the burners and you're cooking. If I can plan far enough ahead of course it will be charcoal or wood.

I have the Ginger Garlic in my fridge and it basically Thai Sweet Chili sauce as you said. Its pretty good but I still prefer Mai Ploy Thai Sweet chili sauce to it.

I am seeing a lot of whitish powder type residue all over the leaves, looks like you have an infestation of Aphids or spider mites or something. I would trim off the yellowish dead limb just below where its still very green. This infestation "if it is" is making your plant sick.
