    Curry peppers 2022

Thunder Mountain Longhorn is a little disappointing to me so far. Plant is growing weak vine like branches. Not sure if I did something wrong with the plant, or maybe that is just a trait of this variety. I removed a pod that had grown down to the soil and was staring to rot. I may remove...

    Curry peppers 2022

Fish pepper is one of my favorites to look at. Potted plants are currently looking healthier than the plants I put in the soil. I moved the potted plants into the shade or out of the strong wind a few times for hardening off - maybe that helped some - or else it’s the fresh miracle gro...

    Curry peppers 2022

After a week outside, no significant damage from the sun or wind. The past week has been slightly cool, rainy, and moderately windy. I was happy with the size of the plants at transplant. They were just small enough to not be overly susceptible to wind damage. I started seeing occasional...

    Curry peppers 2022

Transplanted peppers yesterday after work. Didn’t have much time to mess with hardening off. Weather was warm enough, and two cloudy days forecasted, so I decided it was an opportune moment, and if they get burnt, they will grow new leaves and do alright. I put 9 plants in the ground, and 8...

    Curry peppers 2022

All of my baccatum plants and most of my annum plants have peppers set. No chinense peppers set yet. Lots of pollen this year from the annum and baccatum compared to my chinense in the grow tent last year. Perhaps with my setup, chinense are less suited for indoor fruiting.

    Curry peppers 2022

Black scorpion tongue with first pepper pod of the season. I know some remove early blooms, but I enjoy early pods and end up with more than I can eat by the end of the season anyway.

    Curry peppers 2022

Things have been easy and uneventful in the grow tent. Plants seem a bit healthier than last year. No fungus gnats this year.

    Curry peppers 2022

Fish pepper seedling showing some variegation already. I had a lower percentage of seeds sprout this year, perhaps from soaking in the peroxide longer than I planned. Still have plenty of pepper seedlings overall. I started some more pimento seeds and yellow Siam seeds today in paper towel...

flavor Tamarind hot sauces??? any recipes out there?

I am wanting to try making a tamarind sauce with enough acid to keep it from going bad. Per google, tamarind pH is 1.8 to 3.7. So it should be acidic to start with, and safe to substitute for a portion of the peppers in a hot sauce recipe? Will a sweetener, such as sugar, agave, or honey, be...

    Curry peppers 2022

This year I am trying Miracle gro indoor potting mix with all of my peppers. The basic miracle gro mix worked well for my peppers in the past, but the fungus gnats were an annoyance, and my herbs didn't grow very well in it.

    recipe Trini Hot sauce

I made another 3 batches with Jason's recipe this week. This time I used xanthan gum to thicken and prevent separation. With 1/8 teaspoon gum, it came out plenty thick. With, 1/4 teaspoon, it was probably a bit too thick.

Starting my seeds today, 2-5-22, with a hydrogen peroxide soak, followed by soak in water. Was planning on 1 hr in the peroxide, but it ended up being 1.5 hours.

    Curry peppers 2022

Last year I started my seeds on January 18. Plants were large and fragile by spring, not used to the outdoor wind. Ended up with some wind damage, and most plants needed staking. I am going to start my seeds later this year. I need to pick a date, but I am thinking sometime in February. This...

    Curry peppers 2022

I have seeds ready for 2022. Will start by reviewing varieties from past seasons, then discuss what I am growing in 2022. 2019: Orange Habanero: delicious. Will grow again at some point. Shishito: Nice peppers, but will not grow again. 2020: Trinidad pimento: excellent pepper, will try to...

    recipe Trini Hot sauce

I have also noted, in the video linked above, and in other videos from Trinidad, the peppers that they are calling "scotch bonnet" lack the shape that we associate with Jamaican scotch bonnets. The shape of the peppers in the video are indistinguishable from the congo peppers I grew this year...

    recipe Trini Hot sauce

My wife is from Trinidad and got me started on Trini food. Growing peppers has been easy enough. Growing culantro has been slower and more challenging. My wife and her family call all hot chinenese peppers "scotch bonnet" as a generic term, apparently not referring to any specific variety...
