    This subject comes up often. The pH of most hot sauces are low enough to prevent just about ANY bacteria from growing in it. I routinely keep most of my open sauces in the cupboard, not in the fridge. You have to beware of sauces with a high sugar content or spoilable ingedients like dairy...

    I wouldn't dare violate any of those perfectly good collectibles by sawing thru the wax to get at the capsaicin mixtures within. At close-to-equitable scoville levels, you can always try other stuff out there if you really want to inflict pain on your tastebuds.

    I was just making a tongue-in-cheek reference to some meds that help reduce the hyperacidity in your stomach that usually comes with hot & spicy foods. Sugar is good, but I'm not sure that it's for the reason that Cpt. DEFCON points out...but if it works, use it! BANZAI!!! - J
