    Ok, I received my PH tester today and got to testing. Here are the results for this recipe 3.29, I'm glad I calibrated it to the 4.0 solution because the first reading was 3.20. As for my 1 1/2 to 2 year old jar of hot jarred cayenne pepper sauce the reading is 3.07.

    Yeah,I'm a cast iron junkie. 99% of what I cook is with cast iron. Food just tastes better when cooked in cast iron. I have converted many if my friends over to the Church of Irony Goodness and they agree.

      The only thing that I would use the cast iron for is charring or sauteing the ingredients then transfer to a non reactive pan. Too much vinegar for the iron. Again sorry if the title was misleading.
