I started one. Put garlic in a jar and topped up with honey as described in many recipes.
But after 1 night the garlic swam up in the honey and now the top layer of garlic is above the honey while there's a layer of honey at the bottom where's no garlic.

This is the part I would probably change a bit next time.
I wanted a sweet and fruity sauce but it would probably be a bit better with a bit more added vinegar.
Basically it anyway depends on how ripe or sweet the fruits are you're using.
So experiment a bit with that part.

EL means large Spoon
TL means tea spoon
and "geh." means piled up spoon
After cooking i used a pass mill with thin mesh to seperate the sauce and large / hard stuff
And I did let the Sugar caramelize before adding the passed sauce.

Theres one really easy way to make chili hotter than normal. Add Alcohol!
Alcohol will distribute the capsaicin easier than water.
