15 onion base for wing sauce

Hey everyone!  I haven't been posting for a while as I didn't grow anything in 2013.  However, I still have lots of canned puree and peppers in the freezer.  I'll be growing again in 2014.
 
Are you familiar with the British Indian Restaurant (BIR) 15 onion base for making curry sauce / gravy?  If not, do a search on YouTube for "BIR onion base".  Last year for Christmas I canned 15 500ml jars of Madras curry sauce made this way.  Basically, the base consists of "15 onions", carrots, peppers, and spices; simmered in the stove and then blended into a smooth consistency.
 
While going through this process I thought a similar base would make for a fantastic hot wing sauce.  Different spices of course, and there seems to be limitless possibilities.
 
For starters I'm planning on making an onion base with carrots, and various frozen peppers.  Acually, I could separate the base into batches, do one with anuums, some with chinenses, some with ajis, etc.  Add cumin, coriander, lime, etc for other seasonings.
 
Any input is welcome!
 
Anything that has cumin, coriander and lime is bound to be good.. Some kind of mango hab sauce would be good for wings

And you said that the idea was originally for some kind of curry sauce? Well I bet curry wings could be good..
 
This sounds interesting.  I made  Phaal or Phall curry earlier this year, and used some of it on wings.  It was fantastic!  If you do use this onion sauce on wings, take pics and post them.  I am interested to see how they turn out.
 
Ok, I think I'll do a test run tomorrow night.  I'll make a bunch of base and freeze it so I can pull one out to experiment.
 
So, tomato paste, yay or nay?  I could probably pull this off without it but I guess I have to figure out what I'm going for for the first batch, something traditional or take the cumin / lime / green chile aproach.
 
Yeah, and that's basically what the 15 onion base is used for when making BIR curry.  They make a huge pot of curry base and banch it off into korma / madras / vindaloo / etc.  I need to look it up but the base is like 15 medium onions, a bunch of carrots, cellery, green & red peppers (hot peppers for the wing sauce!); plus spices like turmeric, coriander, pepper, chile powders, cumin, etc.  Different curries get additional spices and other ingredients like vinegar, citric acid, yogurt, the list goes on.
 
So I'll make a base sauce with onions, carrots, maybe some cellery, and some basic spices.  I can branch off from that.
