3 new Sauces

Made my Regular Very Hot sauce, Mango, and Pineapple hot sauces tonight, I also combined some mango and Pineapple sauce in a small bottle, I think its just a yummy combo. Flowered 4 full gallon bags of wings(secret seasoning) and Smoked a Shank along with a shoulder, the shank is still in the fire the shoulder has been sliced and stored for tomorrow, OMG it was soooo friggin good my kids raided the container twice. I started the Pork at 3:30PM its now 12:15AM probably got another hour till the shank is ready, it rained for 3 hours, the fire never faltered WOOT! My Buddies going away party for his college bound kid should be tasty tah say the least!

I suppose I should have put this in Cooking With Fire since I did dry rub the pork with my Red Datil mix after I injected it with some spicy marinade, oH welL,
 
I would love to know what you put in your mango sauce? I made a peach devil's tongue sauce this weekend, but it didn't come out as good as I had hoped. I just bought a few ripe mangoes and I've got all kinds of ripe peps waitin to be saucified.

I sauté onions, adding Spanish Thyme, Garlic, and Basil halfway through the process then add a few cup of water 1 cup Cider Vinegar and skinned chopped mangos 3 or 4, Peppers, Honey, Lime Juice, Cumin, Cilantro, and salt, bring to a boil then simmer for 30 minutes or so. sometimes I add brown sugar or molasses, carrots etc. Then I puree it till its smooth, seasoning is to your taste add or leave out whatever you want, some people don't puree they strain their stuff I like the veggies left in
