food A Tale of Two Thighs

Chicken thighs of course. I bought a big family pack of thighs and decided to make two different kinds. Mango Jolokia Glazed, and Jerk. I used my all purpose rub for the glazed thighs and a dry jerk rub for the others. After about two hours in a 300F oven I brushed on the glaze and the jerk paste and back into the oven they go. That's where they are right now. Finished pics to come soon.

Oh and before anyone gives me grief about the oven, it's cold and raining outside here.

I raised the oven temp up to 450F and brushed them again. Here's the finished pics.

Moist and juicy inside with a nice crust outside.

I had one of each of these last night, and they were freakin delicious.

The jerk was amazing, and the mango jolokia was sweet and tangy, with a nice hot and spicy finish

JayT ...... I love thighs , thighs with the skin on , that's my favorite part of a chicken . I also love jerk ... your stuff looks super !

Peace,
