Thought I'd give growing an agave plant a shot.
If it works out, I'll be able to make a single shot of tequila in about 8-9 years

You perked my interest, especially the pot idea until I read this:

Agave Plant Care in Pots Agave that are grown in pots require even more grit in the soil and can actually be planted in a cactus mix. The addition of small rocks or pebbles to the soil increases the drainage capabilities of the container. Agave plants in containers will require more water than those in the ground and will need to be re-potted every year or so to replenish soil and root prune the plant. Agave plant care for container grown plants is otherwise the same

It wont be in the pot for long. Going to put it in the ground in a greenhouse eventually.

Agave grows like a weed here... If you're lucky, your plant may form pups soon. I have an Agave americana "variegata" that sets a few pups every couple of months. Your one-plant-now can become a small plantation sooner as you think

It can get into the single digits during winter up here in Bama. I'd need a lot of heated greenhouses for that

Agaves can take some, but that low seems a bit extreme... They grow prolific where my brother-in-laws lives, and they have ~600mm annual rain, 30-35ºC max in summer and -5 to 0ºC min in winter.
