Aged Peppers

I was cleaning some of the older jars out of my canning room. When I came across a fair size-able stash of vinegar pickled peppers. The last time we tasted them was when they were about 4 years old ,and they tasted quite good at the time. Now the real question is what should I do with them?

I pulled out a few jars and took some pictures.

Puree them in the blender, add a little of the vinegar from the jars and whatever else you like for a sauce ingredient (Tomato juice, citrus juice, garlic, onion, etc...) ,cook it down into a sauce and bottle or can it again.
 
hello and welcome! :welcome: nice stash of peppers ya got there, like SS said, puree em up and make some sauce and re-bottle. or sometimes I'll freeze some puree in a ziplock lay it flat so it freezes in a flat sheet and break pieces off as needed for recipes.
