Grilled up some chicken last night and had some ripe Amarillo peppers so made a simple Aji Amarillo sauce. I have always had the green version which is incredible, but I was refrigerator diving as it was a last minute thought. So into a sauté pan went onion garlic and and the chopped amarillo till soft, had feta cheese and evaporated milk and used saltines as a binder threw in some cilantro. All into the blender.... damn good. Had some on chorizo and potatoes with eggs and cheese for lunch.
