Aji Escabeche

After some google searches I read that it is the same as the Aji Amarillo, however they are listed as different varieties on thechileman.org. I guess it's possible there's multiple varieties of Aji Amarillo as well.

I am really interested in this pepper (and / or the Amarillo) so any info or leads would be nice. I love making ceviche and having an authentic pepper for it would rock.

Thanks.

After being declared lost in the mail, my Aji Amarillo, Limon, and Panca seeds arrived today. I can't wait to grow these.

Thanks for the offer, smokemaster.

I have Aji Amarillo seeds available for a SASBE/SASE, or for trade. I bought them at a market in Peru. PM me if interested.

The chile used in ceviche (escaveche) varies greatly with locality.
In the youctan , many chinenses are used, in Ecuador, pubescens and etc.

OriganiRN, when did you visit Peru?

I've visited Peru 3 times in '04 and '05.The first time was a vacation, and the 2nd and 3rd were medical missions with CARDIOSTART. It's an absolutely wonderful country(once you get out of Lima), and I highly recommend visiting. While I was there, I had sauces made with Aji Amarillo, and stuffed Rocotos and Rocoto Chile Relleno, and brought back some seeds.
