Aleppo powda blend

30 grams dried Aleppo
10 grams dried Big Jim Heritage.
No more than 1/2 tsp Alder wood smoked salt...this stuff is super smokey.
1 tsp of coriander seeds.
1 tsp paprika powder
1/2 tsp whole black peppercorns
 
Pods are from last year. Today is really sunny and warm so i stuck them outside to crisp up little more before the grind. Gunna make this a fairly fine grind and give it a few days for flavors to merge a little.
 
I love allepo powder, semi mild as so adaptable to just about anything for cooking, flavoring, adding mild heat.

I grew 4 plants from Ed's seeds. That was enough for a good supply of powder. Mine were a bit hotter than the flakes/powders ive bought. Sun drying also makes a big difference in flavor. Depending on how hot yours turn out it can be used for almost anything. We use it mainly like salt and pepper at serving time.
 
To me, Aleppo pepper tastes more salty than other peppers even homegrown.

sounds like a good pepper to use. cant wait to try it out.
 
What’s your technique/system for sun drying peppers? I’ve only used an electric smoker to dry peppers for powder.

I have cookie sheets and 2 cooling racks. Place 1 rack on the sheet. Lay down some halved peppers and hold them down with the other rack.
