another harvest today

How much does freezing take away from peppers I am a little weary of freezing all these peppers but I don't have time to mess with this many peppers at this time due to the hours that I am working I know it is terrible to neglect this beautiful bounty but I really have no choice.

I cut the stems and deseed the large peppers and just split the small ones...Just to make sure they're not rotten in the inside or something

Wow! Lovely little platters of fireballs. You can blanch them in boiling water, cool them under cold water and then freeze in ziplocks or vacuum seal. What a harvest!!
