Are Chinense sprouts purple from the start?

or do they turn purple a few days after sprouting? If they're not, I have a bunch of sprouts that aren't yellow bhuts..

Leave em in the light too long and they'll turn purple.
My guess is if you bought yellow bhuts your still in good shape.

yes some can be purple
Purple Bhut Jolokia, Fidalga Roxa,Pitanga Morango,Pimenta Do Nayde and CGN 21500 are purple and are Chinense species, this only to name a few, these listed above are naturally purple from the start and stay purple as long as they get plenty of light
so yeah they can be purple
 
Hops and Barley is also correct the purple can be a response to too much bright direct light (sort of on the order of a suntan if you will)

Certain types get purple due to light exposure.  Not all chinense do and varying intensities at that.

My habaneros/datils/peach bhuts all had purple stems from day one so I thought it was normal for them
