Go to the grocery store and browse the hotsauce section, there is a reason why they all use glass, its not just ph involved in the correct process
 
eat! If your a professional who lives of making food, sure, but for you? In Asia, especially Thailand they take vinegar and chop chillies in them and let them stand on the table in a metal box until they are empty. I empty them all the time. Maybe they are like 1 day or 50 days old. Never been sick

Sriracha uses plastic and I have numerous other plastic bottles too
