A splash of lemon juice
Pectin
I chop up peppers coursley leaving seeds
Add lemon juice
Lots of sugar
Water
I want it thick and chuncky so I reduce it down without staining.
Add pectin near the end.
I really kinda do it all by look and consistancy. I just add the sugar untill it tastes sweet enough. Sorry, but I don't measure.
I have made jelly, but that's boring compared to a chuncky jam.
Maybe that's why people like this so much. Its thick, sweet, and has a decent kick for the average person. The fact that it is red apeals to people too.
