So here is how my afternoon went
 
made tacos at 5pm, got all done and finished with everything at 5:45, realized it was wing night across the street, and half price shots, and wasnt in the mood for tacos anymore
 
went to said bar, drank 2 shots, had 2 beers, and ordered a round of boneless plain wings and a round of spicy garlic wings, because im fat
 
get home, open TC's hot sauce Marconi, tossed some on said boneless plain wing, and was amazed
 
If you sell this stuff, give me a link, because this is some of the best sauce ive had in my life. The one earlier was just as good, if not better because I love peaches, but damn dude

Haha….no selling here.  Glad you liked them.  If I have more of that one I will send it with next beer shipment.  I do save my recipes and will hopefully be making more sauces once the pepper harvest starts.  
 
depends on what your mash pH is
 
you always adjust your mash pH, not your water pH

to be honest I would almost brew with half tap water and half distilled/RO water
 
that hardness is through the roof
 
did my Kolsch using 3x RO, and 2x filtered tap ...

i need to do my homework still re: which water components are for the mash enzymes pre-boil, and which are for the yeast post-boil ...
 
I end up in decent shape using my filtered tap for big-dark beers, and building upon RO+mine for light-colored beers ...

I look forward to water manipulation going forward, actually, but I'm a weirdo ...
 
Given the choice, I'd have eaten mine Mon-Fri, and yours on Sat-Sun ...

Mine was good, truly, but I could never honestly justify the amount of time and processing that went into it, and especially not relatively speaking ...
