Assorted affordable sauces and stuff

As this falls harvest of pods has come about, I've been cooking up lots of different sauces. Much more than our family could every consume so... what to do?

Offer them up for others to try!

These sauces, jellies and other things are things I've been playing around with and trying for flavors. They have all been processed in a commercial kitchen with proper processing (hot pack, hot water bath or pressure can).

We are keeping the price low, so you can try many different items. None are in production and are a 1-time batch. I have kept recipes for all items, however. Ingredient lists will be posted later.

Basically, it's a Kitchen Clearance Sale!
Basic pricing structure is-
6 oz jar- $4.00
8 oz jar- $4.50
other items as priced- full list at the bottom of the post.

Shipping will be USPS medium flat rate box or large flat rate box ($10.70 or $15.??)

I'll keep a running tally and try to update quantities available as orders come in. PM will hold your order.

What is that 16oz "Special Orange Sauce"? There is no description... I usually like "special" things, I am intrigued. Hahaha

Beagle, The Kid has given his stamp to "some" of the items, some he won't try because they have seeds in them...(I dunno, it's a phase :crazy: )

The Special Orange Sauce is this-
I put the orange sauce through a sieve to make it a really smooth sauce, and in the sieve was all these yummy bits of pulp and seeds. So I put all the bits into a jar, added some orange sauce and there you go! It's the Orange Sauce with all the bits.
Orange Sauce has- orange habs, apple, carrot, bell pepper, onion, cider vin, lemon juice, sugar, water xanthan. Next to the Fruit Sauce, it's the sweetest of the sauces.

Ingredients-
Jelly #1-
sugar, water, peppers, onion, garlic, pectin
this jelly had all the peppers left in the sauce

Jelly #2
Fatalii, hab, 7 pod, onion, apple, cider vin, garlic, pectin
for this one, I strained everything and only chopped up the few hot peppers and added that back in

Fatalii Sauce-
Fatalii, onion, water, lemon juice, sugar, salt, xanthan

Yellow Sauce-
Fatalii, bell pepper, onion, lemon juice, water, sugar, salt, xanthan
sieved, smooth sauce

Orange Sauce
Orange habanero, bell pepper, carrot, apple, onion, cider vinegar, lemon juice, sugar, water, xanthan
Sieved; a smooth, sweeter sauce

Green Sauce-
Green chiles (fatalii, habanero, jalapeno, peter pepper, bhut, 7 pod), green bell peppers, onion, garlic, vinegar, water, salt
not sieved, lots of texture; garlic and onion flavor and then the hot peppers come out

Fruit Sauce-
red habanero, aji chinchi, peruvian white habanero; fresh apple, pear and pineapple; onion, rice vinegar, lemon juice, salt, agave
fruity and sweet, perfect to mix with cream cheese for a dip or on cheese and crackers

BBQ Sauce-
mustard, cider vinegar, sugar, brown sugar, spices, butter,
chipotle powder, liquid smoke, bhut jolokia powder, wheat-free tamari.
smoky and not sweet.

Douhlah BBQ-
(will post in am, have to check recipe :) )

Lavender Jelly-
lavender hydrosol, sugar, lemon juice, pectin, red food color
sweet and floral, use like regular jelly. not hot-

Candied Habaneros-
orange habaneros, sugar, cider vinegar, water
addictingly hot!

I have many pictures of the different sauces and processing. Just ask if you'd like to see something, I will hopefully have a picture of what you'd like to see.

None of these sauces are what I would consider Scorcher or SuperHot. Most are in the medium range with a couple being in the Hot range. Refer to original post for heat ratings of each item.

very nice. i wish that i had the creativity, the patience, and the yields out of my garden to be able to make some of these sauces. they look absolutely outstanding!

I agree. You can't even sell dehydrated or powdered peppers at our local farmers market without license and commercial kitchen. On SL's website she mentions being licensed and has the comm kitchen. That must be a huge investment in both time and $$.

Thanks for your concern, Chris. I've made the same observation to others.

I am licensed and these have all been made in a commercial kitchen with proper processing. These items will not be sold locally because it's not worth it to get all the labels etc done to put them on a local shelf for only 3/4/6/10 bottles. I just thought I'd share some of the creations and let folks try some stuff for basically enough money to cover the cost of materials.

And Yes they are gluten-free! Even the BBQ which has wheat-free tamari in it. The ones with vinegar have just enough to get the pH down, and it's not overpowering at all.

I will vouch for the quality of this stuff. I am so hooked on SL's Ghost Fire Sauce and her BBQ Sauce. I wish I could get a gallon of each. It is that good! I will PM you Ann for an order.
 
Hmm that hab recipe looks familiar, so I know they must be good. Oh and yes the syrup from making the habs is very tasty and useful.
