SL, I started in on your pepper jelly #2 - my wife and I had family over for watching some football. I was working in the office, and suddenly wanted a snack, so I grabbed the pepper jelly #2 and went to the kitchen and grabbed some Ritz crackers. I put a little PJ#2 on a cracker and gave it to my wife.... She took a small bite and said "oh my god, that's HOT!
I finished off the cracker, and continued on putting PJ#2 on ritz crackers... Loved it! GREAT jelly flavor surrounded by excellent HEAT! 
I almost ate the whole jar of PJ#2 in one sitting!!! PJ#2 is one fine HOT pepper jelly, and it's looks wonderful with bits of pepper throughout the jelly! Thank you, SL!
