i use mesquite also.. but all i have now is oak.... mesquite is to heavy of a smoke for me ,oak seems to be what i like ... and it burns slow and the temp stays the same all the time

Mesquite burns too fast and hot. I do like it for smoking salmon though, mixed with some apple.
