food BBQ / Pulled Pork Sammiches - Pickles or No Pickles?

I don't trust any bbq of any kind that has to have bbq sauce.
 
BBQ sauce on brisket...I don't know how many sins that is but its A LOT!
 
Hot sauce & pickles = good.
 
BBQ sauce & brisket = bad juju.
 
Another 'thang.
 
I love Best Made pickles made right here in Texas, especially their bread & butter style with jalapenos. 
 
Not no mo'. 
 
I no longer buy any pickles with preservatives and evil yellow dyes.
 
This year I'ma try my hand at making my own b&b's.

Just had a plate of Q from my local joint, and they have their own (all natural) Devil's Duel hot sauce... shizz is HOTTTT. I had a pulled pork slider with pickle chips and DD, on a cheap white bun as an app... and a half rack with DD. No saucy sauce sweet molasses smoky crapola!
 
I'm a take it or leave it kinda guy. I like a good sour pickle on there if the sauce they're using is too sweet to help cut the sweetness. That's the key, I really don't care for overly sweet sauces or when the meat is just swimming in the stuff. A little dab'll do and let the meat shine through.

I got a leftover piece of fish out of the freezer but no yeast to even make buns.  :mope:
 
TB we have a Texas/German style, butcher paper/per lb. joint here too, and they specialize in Thai spices/peppers as the rubs... it's a bit pricey though. But it's good. They even have the picnic style seating.
 
There's a BBQ renaissance, it ain't just down south anymore. A lot of the pitmasters came from there though.
