food Beef Enchilada Casserole

Filling:
1 pound ground beef
1 small onion, finely chopped
2 tablespoons taco seasoning mix
1/2 cup water

Brown ground beef, drain of excess fat; add onion, seasoning mix, water; simmer 10 minutes.

Sauce:

3 tablespoons oil
1/2 cup flour
3 tablespoons chili powder
1 tablespoon beef flavor bullion
3 cups water

Heat oil in a 10 inch skillet. Add flour, and cook, stirring constantly for about 2 minutes with a wire whisk. Add chili powder, water and stir until a smooth gravy is formed.
Prepare filling. Set aside. In a large skillet heat about 1/2 inch oil until hot. Using tongs, fry tortillas one at a time( dozen pack tortillas) for a few seconds to soften, turning once. Drain on a paper towel. Dip the tortilla in enchilada sauce. Place in baking pan, spoon about 1/4 cup of filling along center of tortilla. Roll tortilla completely around filling.
Turn folded side down. Repeat with remaining tortillas. Pour remaining enchilada sauce over tortillas. Sprinkle with grated cheese. Bake in preheated oven at 375 degrees until enchiladas are heated thoroughly, about 15 minutes.
