Mortal SINcinnati Chili

Spices for this dish are critical. It is actually a delicate balance of spices and heat. Whom else would pair Cumin and Cocoa? Oh wait... Me. lol s'why I must love this so much.
This recipe was developed buy a Greek guy. Soooo good...

• 2 Large White Onions chopped
• 2 lbs. Ground 80/20 Chuck
• 2 Large Cloves Garlic minced

Dry Spices:
• 2 tsp Ground Allspice
• 2 tsp Ground Cinnamon
• 2 tsp Ground Cumin
• 3 TBS Unsweetened Cocoa Powder
• 4 TBS Chile Powder:
  - 4 Dried HATCH Chiles
  - 4 Dried New Mexico Chiles
  - 4 Dried California Chiles
  - Dried Handfull Cayenne
  - 4 Dried Chocolate Morugas
  - 1 Dried Red Savina
  - Garlic Powder
  - Sea Salt

Liquid:
• 30 oz Tomato Sauce (2 cans)
• 2 TBS Worchesterchire Sauce
• 2 TBS Cider Vinegar
• 1 C. Water

• Spaghetti Pasta Cooked Al Denté

• Oyster Crackers on the side.
Â
Order it "3 Way", "4 Way", or "5 Way" Oyster crackers are always served on the side.

Chiles for Chile Powder:

Ground up:
Â
All the ingredients, including fresh ground spices. (Allspice, Cumin, etc. fresh ground)
Â
Add the Ground Beef, Onion, Garlic and Chili Powder until beef starts to look cooked:

Add the rest of the dry spices, and all liquids. Simmer on low, uncovered for 1-½ hours:

4 Way (with Onions OR Kidney Beans) Order it: "4 way with onions!" or beans.. lol
