Bell Peppers Q

Thanks guys for your input,
 
I like to add the red peppers to my hot sauce it adds a great flavor to them usually done with dried like de arbol or piquins and definitely prefer it to carrots that many here use. I use the bells either sauté or grilled in certain occasions.
 
Other good ideas are to use mild chilis like poblanos instead of the bell.
 
     Bell peppers are one of those plants that have been selected over the years to produce fruit for size, appearance and convenience, not flavor. I think their water to flavor ratio is too high to be used in a flavor - intense food like a sauce.
