I was removing the seeds for the pubescens. They just seem gnarlier in the mouth than other pepper seeds, so I removed them. Good point about slicing thick.

And I was talking about jalapenos and forgot this thread is about all other peppers!

when using a mason jar, pierce your peppers. if you don't they will fill up later when the pickle cools and create a massive vaccuüm. Then you need to reheat the jar to open it. i went this road one to many times.
