favorite Best Substitute for Hatch chiles (Favorite Anaheim variety)

As mentioned, "Hatch" is just a marketing brand of sorts. 
 
The Lumbres I grew a few years back were bloody HOT!
NewMex 6-4H are one of my favorites.
There must be several dozen "Hatch" varieties - all are quite yummy....   :)

Anaheims are actually New Mexico type peppers that were taken out to California years ago and grown there, so it is more accurate to just call them New Mexico types. I think the best varieties are Heritage Big Jim, Sandia Select and Barker's Hot, but there are many, many varieties. Check out all the information at the Chile Pepper Institute.
