Blairs Death type sauce

I have a bottle of Blairs Death Original sauce. I like the thickness and no fruity blend/taste, but on the other hand isn't a bowl of Vinegar either... anyone have a recipe similar? i want to use either my fatalis or datils. I want to kind of mimic the texture, taste...? thanks. :beer:
 
Impossible. In my opinion fatalii and datil peppers are very citrusy/fruity and will always give you a far better flavor than any sauce from Blair's.

As for texture thats all a matter of cooking/simmering and blending until you get desired thickness or you could use a natural thickener like xanthan gum, but do some research on that first :)
 
I have always found Blair's Original to have a pretty garlicky flavor. Maybe that is what you like. Try making an orange hab sauce with lots of garlic if you want to mimic Original Death.

Hmm I tend to agree. Only trouble with Mr Blair's sauces are, they come with a lot of extract. Giving them a bitter taste I think (ignoring pure death OBV).

Fatalii peppers have a very fruity taste like the naga that you just cant hide. It's such a nice flavour I cant imagine why a sauce maker would want to hide it. try red savina habs, there used in most Blair's death range which will naturally give you the bitter taste you so want to replicate.

And for an easy option of thickener try corn starch. but same again research all options before committing to adding to your sauce.
 
I'm not tryin to hide the taste, quite the opposite, I like the thickness and texture from it.. that is all. I guess I'm also sayin i don't wanna cook it down with a can of pineapple either.
