Haven't seen anyone post this but I did only skim, so apologies if it's here already.
The following recipe makes a real nice summery ginger beer, not quite as potent as a Jamaican ginger beer but still drinkable.
For a 5 litre demijohn I add -
5 tablespoons of grated root ginger
The juice of 2.5 lemons
2.5 tablespoons of honey
500g caster sugar
1 teaspoon yeast
Ferment as usual, after a month or so bottle up.
I bottle mine into wine bottles so use 1.5 teaspoons for carbonation and 1 teaspoon of a sweetener for, well.....sweetness.
Leave for a week in the warm, then at least a week in the cold and blammo..
Should be around 8-9% mark
