Brian's Ghost Fire Sauce

Well if you read my post on my first sauce attempt you'd know that it tasted great but wasn't near hot enough. So this time around I've ensured that it will be hot. I'm using 20 bhut jolokias and 5 habaneros this time. If this isn't hot enough then I'm going to have to start using Butch T's I guess. I'm going for a more savory flavor this time instead of the sweet flavor of my first sauce.

So here is what the ingredients look like. I'll be updating this ~noon EST (on my work lunch break) with the rest of the progress.

Edit: Also note the PH tester in the background. I want this one to be able to sit on the shelf. It only cost me $10 ($5 for the price, $5 shipping). It was spot on with the test solution I had, we'll just have to see how long it lasts.

Alright, got the sauce all made up. Definitely has that burn I was looking for. I taste tested it at ~12:40 and it's now 1:25 and my lips still have a bit of burn going on. And I completely forgot to put the carrot in. Oh well, the sauce still has a good consistency and an excellent flavor. Can't wait to see how it tastes in a week.

Perhaps if I put the carrot in I could have got 36 oz of sauce. As it is, I only have ~28 oz.

Edit: I need a new camera. The sauce looks MUCH lighter in this pic than it does in real life. It really has a red-orange look.

Might be a good thing you forgot the carrot! Oh wait, only onion and garlic then. I'd pour it all back in the pot and add some applesauce! Maybe half a carrot! And don't forget the:beer:
 
Nice color on the sauce, even without the carrots,

looking at the photo it was probably a "HUGE" success...

Nah, the taste is really good IMHO. Sorry, couldn't have the beer on my lunch hour (frowned upon to drink during work hours). But am I to assume that you didn't forget the beer? :rofl: :beer:

The only thing that you probably lost by not using the carrots was some smoothness to the consistency and a touch of sweetness. If you simmered it long enough and blended it really good you'll most likely never even notice though.

Note on the camera, did you use the flase or just ambient light? Alot of times my flash will wash out the pics and ther colors will appear lighter than they really are.

The sauce is plenty smooth and still has a hint of sweetness from the brown sugar, not as sweet as the first sauce, but that's not what I wanted anyway. All in all, it turned out great. Next time I will increase the heat some more though. We'll see how it changes in a week, but right now, it takes a little while for the heat to build. Once it does, it gives a really good mouth burn, but I want it to hit you immediately. It might though once the flavors meld a little more. My first sauce started out like this one, but after a week the heat hit much faster (not nearly as intense though). We'll just have to see.

As for the camera, I made sure to keep the flash off. I did adjust the white balance a bit on another pic I took, but the color still wasn't true.
