I'd like to find quality pepper mashes in bulk (2-5 gal). Habs, tabascos, and cayenne seems to be fairly abundant, but I would like to find maybe some datils, cumari, malagueta, and/or pequin mashes in bulk as well. I'm also concerned with salt contents, thanks for any info/advice!

Try CaJohn - He can hook you up with just about any pepper puree/mash - and if he doesn't have it he will usually put you in touch with who does.
