I lived in Trinidad for a few years so know the cuisine well. Fortunately near me is an authentic Trini place so for lunch we picked up doubles (plenty peppa for me), saheena and bussupshut with curry. So damn tasty, I had to have a few glasses of rum to complete the reminiscence.

So there is this sort of fast food chain in Florida and Puerto called pollo tropical and serve the grilled chicken ever. I'm trying to get the recipe down from memory. This is attempt no. 4 I think I got it!
