When I was a kid my mom made peach rhubarb pie and didn't like it but I told her I loved it and it was way better than strawberry rhubarb. I haven't had it since but I still remember it! It's amazing!

The sammie is easy, catfish with a lot of blackening spice (put the first coat on when you buy the fish and it marinates in the fridge), grilled. Dressed with spicy pickles, green leaf lettuce, heirloom tomatoes, and chipotle mayo on a rustic hero bread (or baguette).

Enjoy! :D
