Paul - those burgers sure look scrumptious! I made some
last night and made a mixture of mayo, diced Chipotles
in Adobo sauce, fresh minced garlic, fresh chopped cilan-
tro and Adobo seasoning to top them with.
I had no idea I almost replicated a sauce I've never heard
of before...
Last night I arbitrarily selected a back issue of Chile
Pepper Magazine as I wanted something to browse through
while perched upon the Porcelain Throne. Halfway through
the magazine I saw a recipe for Chipotle Aioli:
3 tbsp low-fat mayonnaise
1 tsp chopped chipotle en adobo
1 tbsp chopped fresh cilantro
1/s tsp minced garlic
1/4 tsp cumin
2 tsp fresh lime juice
sea salt and freshly ground pepper
Basically, Aioli is a garlic mayonnaise and there are
many variations. I'll have to use this particular recipe
next time as I'd like to find out how the inclusion of
cumin and lime juice will affect the taste.
