A while back I mentioned that I wanted to experiment with some superhot peppers, to see if I could tame the beast, while still creating a very hot sauce and retaining the character of the superhot flavors.
Judy at pepperlover.com turned me on to some 7 pot Jonahs, and they were quite hot. Unfortunately I only had 1 lb.
I decided to fire-roast the Jonahs, along with Jalapenos and garlic. I then added these to an apple-cider vinegar base with carrot, onion, sea salt, cane sugar, dried Cayenne peppers and fresh squeezed lime juice. This was a small batch, and I intend on keeping 1/2 of it for family & friends (and a couple for myself of course). But I have about 15 bottles that I am putting up here, free of charge*.
*note: free isn't always free - Priority padded envelope = $5.35. Jonahs cost $, the bottles cost $, the ingredients cost $, and I spent 8+ hours in total cooking, bottling and wax-sealing this gourmet hot sauce. So while I am not making any money on this, I'm also not volunteering to pay for priority shipping for 15 packages either. I'm sure you understand. So in this case "free" means $6.50/bottle, limited to 1 per member. Breakdown of cost: Bottle+Ingredients $1 (they were more, but whatever. lol) + $0.15 to cover what paypal will steal from us + $5.35 postage.
My time and effort, packing materials, wax for sealing and lots of

Those same Jonas after about 15 mins of char roasting (stirring every 5 mins) - 10 more mins of this and my yard smelled tremendous. Peek of a roasting Jalapeno in the corner.

How's the sauce?
I think it's fantastic! It's got a rich, roasted aroma with big garlic notes and a distinct flavor from the Jonah. It's quite unique and difficult to describe - it's a smokey taste without the smoke. It's rich and clear but cooperates with the other flavors of Cayenne and Jalapeno rather than competing with them. The heat is not where I wanted it - next time I will double the Jonah. But right now it's probably a solid 7/10, creeps up to a 7.5/10 as you eat more. The flavor is off the hook delicious though - the Jonahs roast beautifully and I feel like this was a very successful experiment.
Now for the disclaimer:
This hot sauce is not a commercial product. It is not for sale. I am not making money from this - I am doing it at a loss. This is a "hobby" batch made in a non-commercial kitchen, and it is 100% at your own risk, should you choose to receive and consume this hot sauce. This sauce was hand-crafted by me with no artificial ingredients or preservatives. It should be refrigerated after opening. It was prepared in a clean kitchen with the highest quality ingredients I could procure. The sauce was pasteurized at 190 degrees, then blended, then pasteurized again at 190 degrees and then bottled hot in new bottles with new caps. The pH tests accordingly with products with 2+ year shelf life, but I would refrigerate after opening nonetheless (e.g. I don't know the temps of your house). As this is an all natural product, some slight separation may occur. Shake well before using. As this was not made commercially or for sale purposes, this sauce has whole seeds in it. I understand some folks prefer their sauce to be seedless - there it is.
