fermenting Couple of new ferments


 
I'm about out of my last batches of home made hot sauce so I figured I needed to start a couple more up.  I got some fresh pods from Romy and decided I would put them to use this way, after I pulled the seeds from quite a few of them.
 
The yellow was a mix of Aji Limon, Aji Pineapple, a SB7J yellow, some Naga Brains, and some orange habs.  I also put some yellow bell, pineapple, peaches, yellow onion, and garlic.
 
The red was a mix of red superhots, red bell pepper, white onion, garlic, and strawberries.
 
Both of them were pretty tasty going into the jar.  I can't wait to see how they turn out in a couple of months.  I"m going to start a couple more once my plants start producing more pods.  I'll be sure to post some pics when I process. :party:  
 
Ended up processing these 2 last night. We went to an orchard yesterday and had some fresh blackberries and peaches, so I used those in the sauces. The yellow got 4 peaches and a cup of brown sugar. The red got a cup of blackberries and a 1/2 cup of turbinado sugar. Both ended up really tasty. The yellow is still pretty hot, but I believe the red is a little hotter. Will be nice to see how these evolve in the bottle.

Thanks Salty! It's up at the top. Mix of yellow peppers, yellow onion garlic pineapple and peach in the ferment. Then the fresh peaches and brown sugar. Believe it or not, it's not super sweet. There is some pretty good heat, the smell is phenomenal though. The texture is pretty thick on the yellow. Really happy with both of them.
