couple simple questions

well it's been several years since I've grown some chile's, this year I bought some small plants at a farmers market.....2 bhut jolokia & 2 butch T (trinidad scorpion)..........well thats what they were being sold as LOL, only time will tell.
 
my butch T's are growing alot faster than the bhuts, is that kinda normal..are butch t kinda faster ?
 
when I potted up, thought had enough soil in the container.....soil settled.....since chiles are related to tomato  can I add soil and burry some of the plant and it'll start growing more roots from there like tomato plants ?
I dont really want to pot up again since I'd rather want the plant to start producing as soon as possiable cuz of short season.

basic cheap potting soil mixed with peat moss (so I can add my own fertilizer when needed)
 
I know a bigger container would be ideal but given ND growning season I want what I can get from them for pods, then cut them back & over winter them / slowly keep'em growing. & then go all out with giving them more time to grow in bigger containers outside next season.
