Made a little Crawfish Maque Choux for dinner this evening. This stuff is the bomb and highly recommended!
Easy to make (Hell, I made it) and definitely a winner for dinner.
Ingredients:
6-8 ears of sweet corn
1 Bell Pepper chopped (All I had was orange)
5 cloves fresh garlic minced
1 small onion diced
1/4 cup of butter (no margarine was harmed here)
2 tbsp Creole seasoning
1 tsp salt
1 lb crawfish tails
1 1/4 cups heavy cream
Cut the corn off the cob and add your diced, chopped and minced ingredients to a pot with the butter.
Add the salt and Creole seasoning and cook over low heat until the corn, onions and garlic get happy.
Increase the heat to medium and toss in the crawfish tails.
Add the cream and slowly bring to a boil.
Reduce heat and simmer until the sauce thickens up.
Serve over rice or pasta... or just eat it right out the damn pot!
