food Crawfish Maque Choux

Made a little Crawfish Maque Choux for dinner this evening.  This stuff is the bomb and highly recommended!
Easy to make (Hell, I made it) and definitely a winner for dinner.

Ingredients:
6-8 ears of sweet corn
1 Bell Pepper chopped (All I had was orange)
5 cloves fresh garlic minced
1 small onion diced
1/4 cup of butter (no margarine was harmed here)
2 tbsp Creole seasoning
1 tsp salt
1 lb crawfish tails
1 1/4 cups heavy cream

Cut the corn off the cob and add your diced, chopped and minced ingredients to a pot with the butter.
Add the salt and Creole seasoning and cook over low heat until the corn, onions and garlic get happy.
Increase the heat to medium and toss in the crawfish tails.
Add the cream and slowly bring to a boil.
Reduce heat and simmer until the sauce thickens up.

Serve over rice or pasta... or just eat it right out the damn pot!

YUMMMM!!!!

I can't see any cream in the dish!  But with them bowties...I'd maw it down!

It is sweet corn season here in PA so I am always looking for new ways to use it.  I am all over this.  I am going to get me some crawfish tails and make it this coming week.  Will post here.  I think I shall add a couple things, namely Lawry's seasoned salt, or Old Bay, and cilantro off the top of my head.  Thanks for the inspiration HNB.

I bet the same recipe would be awesome with lobster or crab too.

Sheesh JayT Now you had to go and get all inspirational, and me with a can o'crab in the reefer!!!!  That was supposed to be for the next TD, but the crab may not make it until then!

Have no fear.... there was plenty of added heat in my plate.  Didn't make it in the pics.
Added a healthy dose of Biker Billy Chipotle powder from Wayright to top it off.
Another rum and coke or two and leftovers are on!!!

The only thing better than that awesome plateful.....LEFTOVERS of that awesome plateful!!!!!! All ready and waiting to be devoured!!!!!!

ENJOY!!!!!!

How did I miss this yesterday? oh wait... :drunk:

What a unique dish, I have never heard of it, nor seen it. I am inspired!
I like that you suggested rice, because for me, that just begs to be shkoffed all over some Basmati or Jasmine.
