Criolla Sella

Good day,

I'm looking to make a sauce that has a nice lemony kick to it but still provides a good amount of heat. From what I've read, the Criolla Sella would do the trick although I've never tried it before. Is this pepper comparable to the Cayenne in flavor? What can I expect flavor wise?

Criolla sella is not the choice you want for lemony. It is a fairly sweet pepper with minimal heat when immature and getting up past jalapeno when they are mature. it is also a thin skinned seedy pod. you would do better to consider another choice. Flavor profiles are not IMO close to cayenne. I think the pod is most suited for slicing lengthwise and topping cold salads.

Aji Lemon and Wild Brazil might be more suitable for the sauce you have in mind.

The flavor profile is just better with lime IMHO

Thanks everyone,

The supplier I'm in contact with also has Aji Lemon which might be better for me. I am going to try this out and maybe throw some serrano peppers in but more weighed on the Aji Lemon side. Is it ok to mix peppers like this? Will that alter the flavor or will it add flavor? Still a newbie trying to learn :surprised:

I find most bacatuums produce a soapy taste in the mouth. Especially lemon flavored bacatuums. You may want to try them before committing to something you haven't had yet.

Were it me I'd try and round out the flavor profile with like colored peppers, something like orange/yellow bells for sweetness and a few yellow scotch bonnets for punch. Such a resulting sauce would carry that lemon flavor you're looking for without it being overpowering or soapy. Mixing peppers is something I do with every sauce I make. Nothing against the single pepper sauces out there, I just find them to be rather one dimensional.
