pruning-topping Cutting Back

Over ther years, I usually would grow 20 + varieties of peppers (400 or more plants). I would end up giving away alot of the seedlings. I end up "mapping" out the garden so I don't get them confused. This year, I scaled way back. Only 6 varieties, 250 seedlings. Maruga, Butch T, Jalapeno, Big Daddy, Fatalli and Yellow Douglah. This is the second year for the Moruga. Last year was 2 plants. This year, 50 +.
 
Yep. I'm just growing my 2 favorites now, but I want to add a third! I would always grow waaayyyyy too many peppers for just me. I used to bring them to work to give them away, freeze, make too much sauce etc. Just a haf dozen plants is all I need per year.
