Do you refrigerate your hot sauce?

Not speaking about preserving. Just out of taste?

I like mine cold. Brings out the flavors and heat more distinctly
 
depends on the ingredients, and usually from a food safety aspect. I have tasted a sauce that said "refrigerate after opening" and it hadn't been...and it was :sick:
 
Nope....the heat on mine is just fine and so is the taste plus you get more of an aging process when you don't refrigerate. My sauce tastes better and better as time goes by.
 
I make mine with fresh ingredients and no preservatives, and when I make more than I will use that day, they go in the fridge.
 
Yes and no for me. I have some in the fridge and some on a shelf. I have not noticed any difference, but I have the palate of a goat, I cannot tell the difference.
 
So wait, some hot sauce labels state to refrigerate after opening. Is this really just optional? How long can a hot sauce after being opened sit on a room temp shelf, and be ok to eat?

Impossible to answer - if you live in Seattle, it can probably sit out for 6 months and be fine. If you live in AZ and don't have AC it'll turn in a matter of days in August.

Basically use good judgement - I decide whether to refrigerate based on the conditions and type of sauce. As a saucemaker I have to put "refrigerate after opening" for liability reasons, but I've had bottles out for months with no issue.

Ps - I too prefer my sauces at room temperature - so if I'm prepping a meal that I'll put hot sauce on (like every meal...) I will take out the bottle a couple of hours before I eat so I'm not putting cold sauce on a hot meal.

Same here and sometimes I heat the salsa or hotsauce with the meal unless it is salsa fresca.
 
I just kinda figured that for safety reasons, they all go in the fridge. Doesn't bother me much. I haven't really ever thought about leaving it out...may have to give it a try.
 
Mine are all in the fridge now except for my extract sauces. I set them out before use to bring them to room temp though.
