Ingredients for short ribs-1 pound each of bone in and boneless short ribs
1 Cup of Red Wine
(2) Carrots and 2 Celery stalks chopped
1 white onion chopped and 8 cloves of garlic(smashed to release oils/flavor)
4 spigs of fresh thyme,1 sprig of fr esh rosemary and 2 fresh bay leaves
2 Tablespoons of Butter
Kosher Salt,Cracked Black Pepper
Drunken Short Ribs- Season short ribs w/kosher salt and cracked pepper. Then placed a Tblspn of olive oil into hot cask iron pot and began to sear short ribs on all sides.They were then removed from pot and placed aside.Next 2 tblspns of butter was melted in pot and then, chopped carrots,celery,whole smashed garlic cloves plus 2 fresh Trinidad Seasoning peppers were added. Saute'd veggies and scraped crusty bits away from pan before adding in a sprig of fresh rosemary,4 sprigs of thyme,and 2 fresh bay leaves. Continued to saute veggies until tender,then 1 cup of red wine was added and brought to a boil w/veggies before placing short ribs back into pot along w/2 cups of water and a tspn of kosher salt and cracked pepper. Brought pot up to a simmer before placing lid on and leaving them to cook for 3 hrs,removing the pot the last 30 min. to allow liquid to reduce down
Ingredients for corn bread-1 1/4 cup plain cornmeal,1 cup all-purpose flour,2 tablespoons sugar,1 tablespoon baking powder,1 teaspoon kosher salt,2 eggs,1 stick (1/2 cup) unsalted butter, melted,1 can creamed-style corn and 1 cup of shredded Jalapeno Jack cheese
Jalapeno Jack Creamed Corn Bread-.Preheat oven to 425°F. Grease a 10" cast iron skillet or medium baking dish.
In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk the eggs, melted butter, and creamed corn. Add the wet ingredients to the dry ingredients and stir until just incorporated.
Pour the batter into the skillet and smooth the top. Then top w/Jalapeno jack cheese.Bake until cornbread is golden brown, about 20-25 minutes.
Ingredients for Panko Fried Yellow 7 peppers & onions- (3) yellow 7 peppers,1 white onion,1 cup of all purpose flour,1 cup of panko bread crumbs,1 egg,Salt,Pepper,Vegetable oil
Panko Fried Yellow 7 peppers & onions- Preaheat pan w/2 inches of oil on medium heat.Slice peppers and onions, then place into flour seasoned w/salt and pepper coating each piece.Shake off excess flour then place into egg wash coating draining away excess wash before placing into Panko bread crumbs completely coating each piece.Place into oil and cook until golden brown. Drain away excess oil and season w/salt.
And that's it,throw some drunken short ribs in a bowl along w/the sauce and veggies,top w/fried peppers and onions and cut a nice slice of corn bread to sop it all up with !!
